A delicious and tender cake that melts in the mouth paired with fruit in sour cream, my grandmother loves to make this dish. The whole family will love this pancake cake recipe. Delicate chocolate pancakes and delicious fruits, what could be tastier? Now I will make this cake very often. Try it too. Cook with love!

► Cooking recipe and ingredients:
2 eggs
2-3 tablespoons sugar, 1 teaspoon vanilla sugar
a pinch of salt
300 ml milk (add little by little)
180 grams of flour
20 grams of cocoa
mix well
add the second part of the milk
200 ml boiling water
2 tablespoons vegetable oil
Leave for 20 minutes
Grease pan once with vegetable oil
Fry on both sides over medium/low heat
15 g gelatin + 100 ml cold water
Leave for 5 minutes
700 grams of sour cream
1 teaspoon vanilla sugar
120-150 g powdered sugar
mix well

Form 20 cm, cover with cling film
Dissolve gelatin and carefully add to the sour cream, mix well
Wrap the pancake to form small sides

some fruits
~ 150 g pitted cherries
5-6 tablespoons cream
Tightly lay out the "pouches" in the form for the cake
leftover fruit
pour the rest of the cream
Cover with a pancake and tuck in the edges
cover tightly with cling film
refrigerate overnight
100 grams of chocolate
2.5 tablespoons of milk
15 grams of butter
heat to melt the chocolate, mix well
Cover the cake completely with chocolate ganache
can be placed in the fridge for 10 minutes
Incredibly tasty and beautiful cake is ready!

Спасибо вам за рецепт тортика. Очень впечатлил ваш результат! Сразу сделала. Поделюсь ошибками, которые совершила: 1. Приготовила очень тонкие блинчики. Их оказалось слишком много на приготовленный объём крема и фруктов. Остались лишние.Блины надо печь не слишком тонкие. 2. Формы 20 см под рукой не оказалось. Использовала форму 23.5 см. Невелика разница? Но на этот объём мне не хватило сметанного крема и срочно пришлось готовить "добавку". В итоге ушло 900 г сметаны ( всю остальную начинку, соответственно тоже добавила). 3. Слишком рано влила желатин в сметану (минут за 15 до сборки) и на момент сборки тортика крем потерял текучесть. Не получилось красивой картинки - ягоды не хотели "тонуть" в креме, а зависли сверху мешочка (не распределились равномерно по объёму ). То есть желатин надо вливать непосредственно перед сборкой! По вкусу тортик неплох, особенно для тех, кто любит блинные торты. В моей семье сказали, что на будущее предпочли-бы в этом рецепте вместо блинов бисквит. Внучка откровенно блины выковыривала и откладывала сторонку - ей не понравилось. А идея в целом замечательная. О своих ошибках написала - может быть кому-то пригодятся.

I made this cake on March 11, 2022. Note: the video is fairly precise, but a number of steps should really be more detailed: the bloom strength of the gelatin used, the volume of batter used for each crepe, the size of the crepe skillet used, the number of crepes needed for the final assembly, the desired thickness of the crepes, etc. Upon completion, the cake looked pretty close to the finished product in this video. It sliced well and had the marbled interior pattern. The taste and texture were ok, but we had the following notes: 1. The chocolate flavor of the ganache is essential. Maybe you might think about mirror glazing a cake that looks this nice but don't do it. A deep, rich, slightly bitter chocolate flavor is important and shouldn't be left out. Perhaps the glaze could be applied over the ganache if desired. 2. For the ganache I used 60% cacao (Ghirardelli) dark chocolate with 35% cream in a 1.5 chocolate : cream ratio by weight. I wished that I had used more than 100 g chocolate so that I could have completely covered my 20 cm cake. 3. The chocolate flavor of the crepes is very weak and hard to taste in the finished cake. This is partly why the ganache is essential. I don't have a workaround for this, right off hand. 4. Canned peaches provide texture to the cake but almost no peach flavor. In the next try, I might use fresh peaches (or apricots) that are carmalized to develop a brighter peach flavor. In the cake I completed, I could taste no peach. 5. The kind of cherries to use was unspecified. I was able to get fresh Bing cherries, so I used those. I reduced them in Kirsch to develop the flavor before using them. They were good, but I think I'd prefer tart cherries. 6. The sour cream filling is bland. It provided a texture but not a lot of flavor. In my next try, I'm going to add vanilla paste or extract to the sour cream filling to add the warm, creamy notes of vanilla flavor to the filling (which I think should complement the fruit and chocolate flavors well). 7. I used 15 g of Knox brand gelatine for the filling (Bloom strength is nominally 225). This was far too much. The filling ended up with an unpleasant, rubbery texture. I'm going to use less gelatin, maybe by half, in the next attempt. The Bloom strength of the gelatin used in this recipe is not specified. regarding #3 - if the steps were altered and you bloom the cocoa powder in the boiling water, this will help enhance the taste. even better - add some instant espresso to the mixture. coffee always complements chocolate. #4 & #5 - i hate canned fruit of all kinds. it looks good, but the flavor is never as potent as it could be. personally, i would use fresh strawberries and cherries, possibly with the carmelization you mentioned. #6 - i really didn't understand why sweetened sour cream was used here. a stiff pastry cream, no-bake cheesecake base, or flavored whipped cream mixed with a vanilla pudding would have done well and held up. maybe that's just a cultural difference.

I just made this cake. Changed a couple of things. I used half sour cream and half cream cheese instead of all sour cream and gelatin. The cream cheese stiffens everything up. I also added pistachio nuts along with the fruit to give a little crunchy texture to it all. I used pitted canned cherries and they were fairly bland tasting. I would use fresh cherries next time. I also drizzled some of the ganache over top of the crepes, once all of them were stuffed into the 9" dish. This gave the crepes a little extra chocolate flavor, as many comments stated that the chocolate flavor in the crepes could be more intense. I agree.

Не думаю, что резиновые блины это очень вкусно. Просто бисквит (можно покупной) наломать на кусочки, будет значительно нежнее на вкус, но на вид уже такой красоты в разрезе не будет. Надо выбирать 💁
