@James Widjaja Actually, that's not really true. I've had one of those 10$ rice cookers in the past, and in the meantime after having watched and read countless reviews, I have pulled the trigger on one of those high-end Zojirushi rice cookers. Yes, they both cook rice and rice will always taste like rice, but it's still a whole different experience and mouthfeel. The main reason being that Zojirushi rice cookers come with special programs for different types of rice and these rice cookers in general don't cook rice at the boiling point of water. They use a much gentler heat and control the temperature throughout the process until the rice is fully cooked. That results in a much fluffier rice and each individual rice corn is cooked through evenly from the outside to the center. Cheap rice cookers hit the rice with high temperatures and the rice is done very quickly. That means the outside of the rice corn can be done while the center is still undercooked or the center is good but the outside is already almost mushy. On top of that, the Keep Warm function in Zojirushi rice cookers can keep rice perfect for up to three days. No cheap rice cooker can do that. That's also great to avoid having to wash rice every day because if you want to eat rice every day, with cheap rice cookers, you would have to cook a new batch every day (or reheat in the microwave which makes the rice even more terrible). And if that wasn't enough, in a Zojirushi, you can put your washed rice and water and then program the rice cooker for the rice to be done at a specific time - say in 12 hours. So is that money well spend? If you can afford it, absolutely. Personally, I was never a huge fan of rice, mainly because my mom and my grandma would buy parboiled rice bags. Mom would buy a kind that would always be overcooked, grandma another that always be undercooked, no matter how short or long you'd cook it. That cheap 10$ rice cooker I got later was an improvement over that, but it was never really that tasty either. Not to mention that it would always have the tendency to slightly burn the bottom. Now with the Zojirushi, it's a completely different story. I could eat the rice out of the machine unflavored unsalted without any kind of main dish alone. The mouthfeel is like biting into delicious clouds. No comparison.

MSG is made by fermenting starch, sugar beets, sugar cane, or molasses and the end product is used to intensify and enhance umami flavors in foods. Umami means “essence of deliciousness” in Japanese, and its taste is often described as the meaty, savory deliciousness that deepens flavor. Non-technically it is meant to make savory meaty flavors even more meaty and savory but it is only one component in any dish that can help make it more delicious.

I am still new so I don't understand how it works per se or how it adds any flavour, honestly my brother who watches alot of uncle roger was really underwhelmed when I said I used msg in this. Something I want to try is braising it in a smoker with straight pecan wood and using some of the braising liquid to make tare. While I'm at it I might as well smoke my own katsuobushi using the same wood.

Regarding “chāshū”, he’s technically not wrong in calling it “char siu” as the word チャーシュー derived from the Chinese “叉燒”, and is even written as “叉焼” in Japanese at times. “Chāshū” is basically Japanese style char siu

Actually for traditional tonkotsu ramen, thin ramen noodles are used. As a rule of thumb, if the broth is rich and salty, thick ramen noodles are used. If they are light, thin ramen is used. Thin noodles are used to increase surface area while thick noodles are to decrease it, and this is how noodles are used to control how much broth you take in with your ramen.

Colorism - prejudice or discrimination against individuals with a dark skin tone, typically among people of the same ethnic or racial group. I don't see how either of these apply since it was neither trying to make someone feel inferior for their skin tone nore showing prejudice or discrimination towards either of the men listed because of said skin tone. Why don't you go ask Obama or Wesley Snipes if they are offended by a comedian making jokes about the marinade shade on a ramen egg before you get your knickers in a twist. I guess your delicate feelings would have been less hurt by him saying it is more of a Baywatch David Hasselhoff tan than a George Hamilton tan. Fun fact is that Japanese Ramen and Chinese Lamian sound similar but not the same thing. Lamian is pulled by hands in long shape while ramen is cut by slicer.

Chashu is basically the Japanese relative of Cha Siu and they originate from the same Chinese term 叉燒, Chashu is the Japanese Romaji spelling and Cha Siu is the Cantonese spelling. This type of pork dish was passed to Japan and Southeast Asia long ago and became two different types of dishes. Hence, Uncle Roger is correct that the two terms refer to two different types of pork dishes in the English context, and that's the reason why they sound very similar and look a bit similar as well. I believe that the Southeast Asian version is much closer to the original Cha Siu which you can still find in (especially the Cantonese speaking part of) China, which is a pork dish with a sticky, sugary brown coating and pink coloured meat inside, while the Japanese version we see in this and many other ramen videos is of savoury taste and is rolled in that distinctive way.

What I keep having trouble with is finding the exact point when char siu came over to Japan. I heard a rumor that it came over during the early Edo period when a Chinese immigrant made char siu for the Tokugawa family and they loved it, but I can't confirm it.

This part of the disclaimer is very important; otherwise it could be viewed as cultural appropriation also. This is the reason why so many people hate Jamie Oliver. He frequently alters the original recipe and just do his own sh*t without mentioning how or why. People who does not know the difference would think that is how it is done with the original dish. You also cannot tell if he is simply ignorant and screwed up or intentionally trying to improve on taste more suitable for local palate. That is just wrong. What Gaga is doing is the correct way of doing instructional video without offending anyone.

When cooking chicken feet, chop of the finger I usually cook bone marrow separate from the broth. Steam it whole with the hole up so it won’t spill. Put marrow when assemble the dish, so you can enjoy it by spoon or just suck it out

That's what dashi is for. Natural glutamic acid can be extracted from kombu, dried shiitake mushrooms, katsuobushi, and other natural ingredients in the form of dashi. That's also the purpose of tare. According to Ramen Lord, tare is supposed to add salinity and glutamic acid to the broth. Those are the principles used when cooking your tare. That being said, in other situations where the cooks are bashed for using instant noodles instead of kneading their own from scratch while using crystalized MSG is ignored, I find that hypocritical.

A good ramen soup is boiled for 8 hours, 3 hours on high heat and you have to keep Stirring it to avoid any bones stick on the bottom of the pot. The remaining 5 hours on a Low heat. You can get pork bone rib from Butcher if you order it one or two weeks ahead and normally they will be able to get it for you.
