@Julia Wacker I don't know anyone who thinks Taco Bell is real Mexican. I've been to Mexico & I have had plenty of authentic Mexican food here in the south west. I'm in Colorado and we have huge hispanic populations with a lot of authentic Mexican food.

@Rudolf Hesspretty sure that stems from the slavery in America (at least partially) and how poc were oppressed, but that was so long ago. It was bad, 100%, but saying a joke doesn’t mean they wanna oppress people. I feel like some people, sadly especially those who really like to point out that they (more like their ancestors) were oppressed, forget that white people have been oppressed and been sold as slaves to poc. Hell, poc have had other poc as slaves. No one is a saint and all races has done some shit to other races or their own. With that logic we should either all be able to make jokes about race, or no one should be able to.

'tor-till-ers' :-) I've eaten amazing corn tacos, I've yet to find an authentic Mexican restaurant/takeaway here in the UK, which is such a crying shame b/c the cuisine is so varied. I once visited a Mexican restaurant, had high hopes, my stomach was soon heading for the exit as the waitress started bringing the food out which included spicy wedges straight from Iceland lol

Eh, it's not a super common cuisine here. There's no mexican fast food, and mexican restaurants are pretty rare. Mexico's an ocean away. Most brits have only really ever had an Old El Paso fajita kit, that's our exposure to mexican food. It's just not a very common cuisine outside North America I suppose.

As a Brit who loves making authentic Mexican food, it is tricky to find the right ingredients as most supermarkets don’t carry cotija cheese etc - we do what we can! But this was shockingly bad lol

Considering how Americans have constantly changed the spelling and pronunciation of countless words it really wouldn't surprise me if it's Americas fault at this point. You also say they've undoubtedly heard it before but Mexican food is no where near as popular here as it is in America. I think it's in the top 3 foods there but here it's not even in the top 20, the same for all of Europe as well. How many countless foods could I name that you and half of Americans haven't heard of?

@Wolfy11188 As an American I can tell you Worcestershire is easier to say than spell. If you hear it once, it's simple. These people have undoubtedly heard Taco said correctly and still say it wrong. The degree to which some of these people way over complicate the way they say things like guacamole, it's no wonder a simple to say word ends up being spelled like Worcestershire. Brits are clearly overthinking things so hard they go full circle back to not thinking.

7:46 my wife has the soap gene. She brings it up a lot anytime we get Mexican, because I love cilantro. Eventually she decided to force me to taste test soap to understand the pain she has to experience anytime she eats cilantro. Turns out I have the soap gene too. I've had authentic Mexican tacos at a lot of restaurants they are a lot more simple than Americans or UK make them. They're just corn tortillas, a meat (asada, chorizo, pastor), onions and cilantro with a squeeze of lime. And if you want to give it a kick they have pepper based salsa.

I have a show idea: scrap together horrible cooking videos Uncle Roger would review and cry over but hasnt seen yet (plenty get uploaded each month), edit out all references to the dishes name/origin and then have Uncle Roger or other decent cooks try to figure out what dish these cooks actually try to make. Given the horrors we have seen so far there could be some real challenges in that.

I don't know what BBC was thinking when they prepared this episode. It's not that there are many restaurants in entire Europe that serve authentic Mexican food, I guess most of the contestants never even tried Mexican food and simply don't know what to do. English cooking doesn't have a good reputation anyway, but it seems they want to keep it that way.

If I may add to the “As a Mexican™️” input: Uncle Roger’s comment about too many spices interfering with the simplicity of Mexican cuisine is _spot on_ - much of Mexican seasoning of chicken or beef is salt, pepper, and _maybe_ lime, onion, beer, and/or a specific chile. None of my tías’ recipes use cumin or paprika or chili powder, and oregano is used as a condiment in specific circumstances.

@Cyrus Stark I love ant eggs, shrimp paste etc. especially if you know people from Yucatán lol that’s like their daily food when it comes to seafood. I married a super white guy from Georgia and he loves eating Mexican food. I’ve crossed him over for months to visit family and try food. He is obsessed with tejuino, chapulines, tortitas de camaron, and basically everything. Lol like people just think of Mexican food as tacos and tortas and asada and done. My husband was like omg I did not know fermented pineapple tepache was a thing and tastes so good. Yup it’s endless. He still has not tried even 1/4 and neither have I.

@Cyrus Stark thank you!!!! Finally someone that understands gastronomia de Mexico. Cumin is seriously used a lot. Just because you cannot taste it does not mean it is not there. Anise is used especially in Mexico City for Jellos (my dads uncle was very well known for all of his jellos and sold mostly anise ones ) birria, has cumin ginger laurel etc. we definitely toast chiles and fry them when the food calls for it. People love to claim they know Mexican food but ignorance is bliss and the cuisine in Mexico is the most diverse in the world. It is known that you would not repeat a dish in over a year because each pueblo each city each state has a different way to prepare the food. Pozole is so diverse even with just the type of meat and some add vegetables. I myself grew up with just the maiz, patas de puerco, y carne de puerco, topping are lettuce salsa roja y rabanos. Most use cabbage but lettuce is my preference. Menudo in Jalisco from cuidad Guzman is white with no maiz and just the lining. But in the USA is mostly thought of as just the red Juanitas menudo in the can more of the northern style. Quesadillas in Jalisco come with cheese but in Mexico City it does not come with cheese. Lol. But people lack knowledge of the history of it. So there is no way for Mexico to use cumin. That is blasphemy! What are we Indian and middle eastern?? How dare we have even though tacos Al pastor are basically an influence of Kebab lol

This was too funny. As a cook doing southwestern Mexican inspired food, they were all totally appalling. It was truly pathetic to watch, but Josh and Uncle Roger gave it the the humorous approach needed. Hard to believe no one did their homework.

It's just about the influence of the respective cultures and obviously America has a much larger Spanish influence than the UK. It's not some imaginary malice on the Brits part lmao

@Good Guy Konrad dont know if you ever would but if you somehow someday end up in America, Los Angeles to be exact, go to a resteraunt called El Barco for authentic mexican cuisine, or an alternative go to a resteraunt called The Nest in Downey and get theyre chilaquiles (though its not authentic mexican chilaquiles, as a mexican myself I give it the stamp of aproval)

As a European who tries to occasionally follow recipes I can tell you that cotija is not readily available in my country and upon googling substitutions feta cheese is actually the one that comes up. So I am ashamed to say I have used feta as a sub for cotija 😅😂

If you're looking for a replacement for queso fresco, look for paneer. If you want a replacement for cotija, many dry crumbly cheeses, especially many Italian varieties (pecorino, parmesano etc) can be suitable substitutes.

I’m Mexican American, and personally, I’ve never seen a Mexican use rare steak for tacos. It’s always fully cooked, seasoned simply yet heavily, and usually you chop the steak to small bits before you start cooking it.

It is not hard to understand any food if you choose to do it right. Use the right tools, and use the right ingredients, then try to use the right techniques to the best of your ability. You can not make a stir fry with a slow cooker, and you can not make BBQ with a wok under normal conditions.

😲 I heard bake off and got excited. Then heard British and Mexican, making my anxiety kicked in. I thought maybe a dessert? Hell, even enchiladas! Tres leches cake would have been a simple recipe. Starting with the Juan joke, which I mean, okay jaja, it's just incredible how they allowed all of that to happen. It was really interesting and extremely funny to see people interact with such an unknown culture, that avocado peeling JAJAJAJA, letal💀. But just wow, I almost can't beleive I watched an actual bake off episode. And thanks to both of you, I'm actually surprised how much you two know about comida mexicana. Just FYI, Cotija cheese is really hard to find in europe, so usually it is recommended to find a equivalent such as feta cheese and pecorino romano. Some mexicans also use it in europe for home food.
