I have seen my vietnamese mother break down and cry on the kitchen floor when her pho broth came out cloudy! If my mom saw this broth, she would have a pho-king heart attack!

As a Vietnamese person, I was in pain at the part where she BOILED HER DAMN BEEF. Honestly, this whole video pained me so much, especially the part about defrosting her *beef stock*. That looked so opaque and unappetizing.

I remember when someone got a Vietnamese exchange student as their new roommate in college. They tried to make pho but since they were buying stuff either on campus with the meal card or at Walmart they didn't have a lot of correct ingredients. She was very confused how pho turned into weird chicken noodle soup, but it was the thought that counted I guess. Now I understand why she was so confused when they presented the faux - pho. Uncle Roger would have been so mad

There are only a few chefs who truly respect culture by learning the correct techniques and methods of cooking other culture food. She isn't close to being one.

Rachel doesn’t have an excuse - she has access so all the proper ingredients - I live in a small town in Alberta, Canada and we have an amazing Vietnamese restaurant - they make everything from scratch and are the sweetest people - I love trying to cook new things - but like you said you can also support your local Vietnamese restaurant and visit the awesome people while you’re at it!

The biggest issue for meis that she clearly knows the correct way of doing things, because she makes references to the correct way through every step. She’s choosing to not do it correctly. If you “cheat” through every step of a recipe, it’s not the same dish

I tried Thai basil because I was at an Indian grocery in Tallahassee, FL. WOW! I ended up getting a plant for my herb garden. Uncle Roger is so right, there's NOTHING LIKE IT!!
