For those who don't know, he needs to change the oil because earlier he 'seasoned' the wok. Which means heating it up so much, the oil exceeds the smoking point, ending up with a burnt flavor. So removing the burnt oil and adding fresh oil gets rid of that unpleasant taste. FYI, I used to make egg fried rice at a chinese restaurant for years. *EDIT 03-14-2023* Correction as pointed out per reply: "it's more to do with the metal expanding, the hot oil being absorbed and 'sealing' the metal. The cold oil then cools down the surface, seals in that hot oil from before and allows you to cook with a utensil that is pretty much 'non-stick'." What I described earlier, was my own experience in seasoning the wok by eating the wok and burning and discarding the oil. I never realized that Chef Wang Gang here did not need to let his oil exceed the smoking point and I never wondered why. 'Cause if you look closely, he throws the first scoop of oil back in the vat of the fresh oil as it was not smoking. With that said, there are still more reasons to change out the oil. And it's that the oil is still too hot to put garlic and shallots in, as it burns too easily otherwise.

A little backstory on Chef Wang Gang He always wanted to be a chef, but his dad didn’t approve of it, so when he was a teenager, he ran away. He started working up in different restaurants, getting the recognition he deserves now. Chef Wang never went to culinary school, nor did he have a proper background in cooking. And in times he needed help, he always went to this uncle in the video (his 四伯爷), and the uncle would always give him comfort. However, now his relationship with my dad is healed as he discovered his dad were collecting news articles about him (because he cared for him).

Just as a bit of extra info, the exhaust gas of the stove pass under the cold water pot, the cold water pot is serves two purposes. One is to cool the exhaust gas so that the inner insulating lining of the stove won't overheat and peel off, and the exhaust gas won't ignite anything in the kitchen after it's been released from the upper back of the stove. Second is the running water would create a water membrane on top the stove, stopping the oil from adhering to the surface. The amount of water needed to clean the stove twice a day is about the same as keeping the water running (the high heat during cooking would bake the oil on to the stove if the water isn't running thus needing more water to clean), it also significantly reduces the time needed for cleaning.

@Goodbye Mr. Anderson I don't know about you, but I don't have an restaurant gas stove in my kitchen, and I've seen them in kitchens in restaurants. If you don't use that much water the stove would overheat and break down, also if you see the grease baked on the stove you will regret not letting water running.

Well, then I will tell you Wang Gang is actually a slightly above average chef in China. He is famous because he found an edge in the internet world, and of course his passion towards cooking. Skill wise, it is not that impressive because its just Cooking 101 for professional Chefs in China. However, this is not to bashing Wang, I love his videos and learned to make lots of dishes from him. Just stating the truth that You can name at least 3-4 chefs from every mid-size restaurant who have the same skill level as Wang has.

this will be pretty meaningless, but after watching so many asian cooking videos and watching so much of nigel being roger, all this video made me do is sub to wang gang even though i will never cook asian food (because i can't), or any food like this. but it doesn't matter because even the little snippets you sprinkled into THIS vid showed a world of passion i've never seen before. now i'm subbed to wang gang and binge-watch ever... EVERYTHING he has because wang gang and all his family and relations are such lovely people and wang gang shows cooking like love with asian perfection. i love Chef Wang Gang. he deserves everything he earned. everything!

I instantly subscribed. I used to work in a Chinese restaurant so I get a lot of the humor and the character. We had an uncle Ben for a coworker. I can't resist a good fried rice dish, but especially the house special or simply the shrimp fried rice. I got cursed at so much in mandarin it's not even funny but they eventually let me eat at the table. The head chef used to tease me with the ducks they'd hang around with the head on. They'd curse at me whenever I would be like hey can you make me an egg roll?

Well-mastered basics are always worth more than trying too hard. I sometimes too wonder what to cook for the house, then I gave up on trying anything special and goes for something simple, and it works well. Same with soup... like, I often realized that soup with very few ingredients (like the famous yet simple onion soup) is way better than soup where you try to mix tons of different veggies.

I have followed Chef Wang for a while and watched his stories of when he just came out and started learning to cook. He started from just a basic trainee in a restaurant by doing lots of tiring and easiest work but he would use the time outside of his work time to learn from other chefs. He had been trained and worked as a chef for many years and been to do many different restaurants to learn. That’s why he has such a solid and good foundation and techniques.

Actually "wok hay" can present in the dish that was cooked by Chef that mastered the way to create it. scientifically, it is a process to create Maillard reaction by using high heat + dry ingredients+ oil with experience.

As an executive chef trained in Japan, Taiwan, USA, Mexico, it is always a phenomenal joy to watch Chef Wang. BTW those wok stoves run on diesel, and they run hot, the water is there to keep the wok stove from melting, that's how hot it is, the water is also used for cleaning items, like the wok, and cooling it off quickly as necessary. love this video, the other ones with Jamie, Rachel, BBC, etc I can never finish, too damn painful and infuriating.

I don't know what makes this video more perfect, that the guy is his uncle, that he's wearing a similar colored shirt as Uncle Roger, or if the Uncle Roger character plays on tropes so well... Chef Wang showed how simple it is to make decent egg fried rice. The techniques he used are not necessary for cooking good rice. Gang just can do it. It shows that Mr Oliver really didn't spend more than 30 minutes studying how it's conventionally done before he decided he could just make a whole video about how he imagines egg fried rice should be cooked.

You are so right about Asians having 2 kitchens and the inside one being useless 😆 My (Filipino) dad had a vacation house made years ago, put a fancy (expensive) induction cooktop in it, and told us not to cook there (only sometimes, he says) because he doesn't want the whole house to smell like food. The cooktop is now just part of the countertop. Same goes for our normal house: 1 "clean" kitchen for inside, where the stove is usually used as a "buffet" table where we put the food during meals; and 1 "dirty" kitchen for actual cooking. Our dirty kitchens are not outdoor though.
