Arst Koben got to disagree with everything you've said. I once saw her mash up some avocado and put it on toast. That's literally all she did. She's not successful for her food, it's her personality and presenting style. And there are plenty of talented female chefs. There might be more males in TV and celebrity chefs, but I've worked with some great female chefs. And even if there are more men in the catering industry, that doesn't mean women can't cook. It just means they chose other career paths.

This still don’t really justify it. The way and the ingredients she puts in this noodle soup is way too far from what and how a real miso ramen is made. The level of disrespect and she’s making money out of something isn’t even 50% authentic? Would she put two pieces of cake and put them together with cream in the middle and just call it macaroons? No. Would she use Gyoza wrap to make a dumplings and call it ravioli? Perhaps not. Wrong is wrong, there’s nothing to justify here if she’s actually “teaching” and show you how to make something as her career.

Not sure why, but no ramen place where I live uses actual ajitama and I have no clue why. I mean, yes, the USDA says restaurants aren't allowed to serve soft-boiled eggs. That I get. But why don't they at least marinate the hard-boiled eggs they DO serve? I actually made it for myself a few days ago and I'm VERY impressed by how far the marinade can penetrate.

So sorry, it might be leagues above what you were expecting, but it is so below good food. If I made something like this, I would tell absolutely nobody about it, never mind making a video and posting it for the world to see. Damn!

@Mamut A soft boiled egg isn't exactly skilful or hard to get right. Very easy achievable for a home cook. That one may have been made by someone else beforehand but it doesn't mean she can't do it herself, easily.

While I disagree on egg preparation, as I would never eat a runny egg, you are right about the presentation.

@Bodi Games Personally, I'm a fan of Jamie Oliver"s, and you're right! I think he was simply trying to adapt the ingredients and cooking style/utensils so that the average white household can try out the recipe. However, I must agree with Uncle Roger that Jamie Oliver has gotten the basics all wrong. Fried rice should never be wet. The scallions can be stir-fried, but only the white bits. The tofu used was also the wrong kind, soft tofu will make the fried rice very wet. If that's the only kind of tofu available, then Jamie should teach his audience to press out the excess liquid with a heavy pan, or pan-fried the tofu first to remove the excess moisture. The chili jam is simply wrong in terms of the flavour profile. A few tsp of soy sauce plus a sprinkle of chili flakes might be a better choice. Using a wok would definitely make cooking fried rice easier, but using a pan works too. Anyway, it was Jamie Oliver's interpretation of Asian food, adapted to the taste of the average white Joe and Martha, who would most likely enjoy it more than authentic Asian fried rice. It's like me and my Asian friends' preference for Taco Bell food over authentic Mexican cuisine. Mexicans would frown and roll their eyes at us when we tell them that, and we would all have a good laugh!

@Shelley James Yes had same large wok for over 40 years. Nicely seasoned now. I love my wok, and a stir fry just does not taste the same in an ordinary pan. First Asian cooking book I bought was Ken Hom, a long time ago.
